Georgia Gilmore’s Iced Tea, as told to Martha Hawkins

“The secret’s all in the boiling. You boil sugar and water together first, the day before you want to serve it, then you put the tea bags in a pitcher with aluminum foil on top. The next day, you take the tea bags out, add water and just drink ’til you’re tired. You can’t have just one glass, you know. You will never want to stop drinking tea.”69

2 cups cold water

3 family-size tea bags

1 cup sugar

Lemon juice to taste

Place the two cups of water in a pot and add teabags. Bring to a boil. Remove from heat. Let it sit. Pour warm tea into an empty pitcher. Add the sugar. Stir ’til sugar is dissolved. Let it sit overnight in refrigerator.
